Method

  1. Combine the brisket, lard, water, onion, garlic, bay, and salt in a wide pot and bring to a gentle simmer.

  2. Simmer uncovered until the water evaporates and the meat is left frying gently in its own fat — the confit stage that makes suadero suadero.

  3. Meanwhile, boil the tomatillos and serrano until soft, then blend with garlic, cilantro, and salt into a loose salsa verde.

  4. Pull the meat from the fat, chop it roughly, and press it onto a hot plancha or skillet with a spoonful of the cooking fat until the edges crisp.

  5. Chop the crisped suadero fine with a bench scraper or heavy knife, taquería style.

  6. Warm the tortillas in the fat left on the plancha, fill with suadero, and finish with salsa verde, onion, cilantro, and lime.
